About Us

Located in the shadow of Pueblo’s world-renowned steel mill, El Nopal has been a Pueblo staple through many generations of locals and travelers alike. Opened in 1955, we started as a small walk-up/carryout eatery using the recipes that Rosa “Ma” Torres brought with her from the old country. In the early 1960s, we added a full-service dining room to accommodate the ever-growing clientele. Since then, our restaurant has undergone many changes, never losing its unique and unparalleled authenticity that were so firmly established by Rosa Torres and her son, George.

We are honored to be third-generation owners of El Nopal and we pride ourselves in continuing the same practices our family started so many years ago. Today, we use the same traditional techniques, fine spices, and choice of ingredients that our family has used for decades. We are both humbled and proud to have served our homemade fare to generations of families from all corners of the globe. When you dine with us, you become part of our family too.
